Sheraton Amsterdam Airport Hotel and Conference Center has taken a significant step towards reducing its food waste by partnering with technology provider Leanpath. The hotel, which boasts 417 rooms and a large food and beverage program, aims to cut its food waste by 50 percent, aligning with Marriott International’s broader goal to halve food waste by 2025.
Located inside Schiphol Amsterdam Airport, the hotel faces fluctuations in its dining numbers due to its proximity to the airport, often resulting in overproduction by kitchen staff.
Data from Leanpath shows that overproduction is a leading cause of food waste in food service and hospitality kitchens. To combat this issue, the hotel has turned to Leanpath’s food waste tracking devices, which provide insights into the types of food being wasted and the reasons behind it.
By implementing a food waste prevention program, the hotel aims to not only minimize its environmental impact but also make significant financial savings. The partnership with Leanpath comes at a crucial time, with one-third of the world’s food production going to waste annually, a quarter of which originates from the food service industry. This wastage amounts to a staggering $1 trillion each year and has significant implications for greenhouse gas emissions.
